Date And Walnut Cake

Ingredients

300gm Maida
300ml Milk
150gm dates
110g Powdered Sugar
50g Walnuts, chopped
4 tbsp Oil
2 tsp Ground Mixed Spice
Walnut halves - to decorate

Pre-heat oven to 180°C: 350°F
Grease and line a tin with buttered greaseproof paper.
Sift the flour and spice together into a bowl.
Add the dates and walnuts and mix.
Add the milk, sugar and oil, stir thoroughly.
Spoon the mixture into the tin and place the walnut halves on top.
Bake for 45-50 minutes or until golden brown and firm.
Turn out on to a wire rack to cool, after having removed the lining paper

Carrot Pickle


Ingrdients:

1/2Kg Carrots Grated
1/2Cup Oil Mustard
1/2Tsp Red chili Powder
1/2Tsp Mustard powder
1/2Tsp salt
1/4Tsp Fenugreek Powder
1/4Tsp Cumin Powder
1/2Tsp Corander Powder
50Gm Gur
1Tsp Lemon Juice

For Seasoniong:
1Tbsp Oil
1 Sabut Red Chili
1/4Tsp Mustard
1/4Tsp Fenugreek
2Pinch Asfotedia
Pinch of curry powder
4-5curry leaves

Method:
In a Pan heat 2Tbsp oil,put mustard when it splutters add all the ingredients of seasoning remove from heat and add all the powders and grated carrots. when cool add gur and lemon juice. fill in a jar. it can be eat in 2-3 hours and can be stored for 1-2 months
